Spun a bearing in my truck and ended up pulling the crank. good journals measure 2.14 spun journal measures 2.06 my question is....where can I find a chart showing whether or not I can get this ground and/or what bearings to order once I get it cut?
Back in the day the standard was 10-10, meaning the crank was ground .010 on the mains and .010 on the rod journals. Then .010 over bearings would make up the kit. If you have just one journal bad they may recommend grinding the one journal and use a oversize bearing. These over size bearings come in all sizes.

I've used 10-10 cranks in hi-performance engines without issues. As for the odd rod it would be fine for normal use. Obvious a race standard engine requires the best of everything. You might be surprised how many remanufactured engines have different size bores/pistons along with different sized bearings. Buying one can lead to a lot of surprises.
